Dad’s Favorite Smoked Sausage Stew

This is a real Dad-pleasing meal!  What’s not to love?  It’s hearty, filling… and there’s no getting around the fact that Dads love sausage in any form!  This stew takes a bit of time to cook, but that just gives it more time for the aroma to saturate the house.  Happy Father’s Day, Dad!

8-10 medium red potatoes, quartered
2 large white onions, quartered
1 large green pepper, chopped
1 large sweet red pepper, chopped
2 pounds smoked Polish sausage, cut into 1 inch slices (I’ve also used bratwursts)
1/3 cup olive oil
1 tablespoon dried basil
1 teaspoon pepper
1 pint heavy whipping cream
3 tablespoons cornstarch
3 tablespoons water

You will need a large roasting pan for this recipe. Preheat oven to 350 degrees. Place the potatoes, onions, peppers and sausage together in the roasting pan.  In a small bowl blend together the oil, basil and pepper until well blended. Mix the oil mixture with the meat and vegetables being sure to coat them well.  Cover the roasting pan and place in the oven.  Bake for 50 minutes.  Remove pan from oven and remove lid.  Stir to make sure none of the vegetables and meat is sticking. Stir in the heavy whipping cream.  Recover and bake 45 minutes or longer or until the potatoes are fork tender.  Remove the roasting pan from the oven and pour the mixture into a large Dutch oven.  In a separate bowl stir the cornstarch and water together until the cornstarch is dissolved.  Stir into the meat and vegetables.  Bring mixture to a rapid boil.  Continue to boil and stir until mixture thickens to your liking.
